BREAKTHROUGH Jamaican Banana Bread Recipe Changes Everything!

Jamaican Banana Bread Recipe
Ingredients
Bread
2 tbsp unsalted butter, softened
2 tbsp cream cheese
1 cup white sugar
1 egg
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1 cup mashed overripe bananas
1/2 cup milk
2 tbsp dark rum, or rum flavoring
1/2 tsp lime zest
2 tsp lime juice
1 tsp vanilla extract
1/4 cup chopped toasted pecans
1/4 cup flaked coconut
Topping
1/4 cup brown sugar
2 tsp unsalted butter
2 tsp lime juice
2 tsp dark rum, or rum flavoring
2 tbsp chopped toasted pecans
2 tbsp flaked coconut
Directions
Preheat your oven to 375°F (190°C) and lightly grease two loaf pans.
Beat together softened butter and cream cheese until fluffy. Gradually add sugar and beat until incorporated, then mix in the egg.
In another bowl, whisk together flour, baking powder, baking soda, and salt. In a third bowl, combine mashed bananas, milk, rum, lime zest, lime juice, and vanilla extract.
Add 1/3 of the flour mixture to the butter mixture and mix. Stir in 1/2 of the banana mixture. Repeat with the remaining flour and banana mixtures. Fold in pecans and coconut flakes.
Pour the batter into the loaf pans and bake for about 1 hour or until a toothpick inserted comes out clean.
Let the loaves cool for 10 minutes, then transfer to a wire rack.
For the topping, simmer brown sugar, butter, lime juice, and rum in a small saucepan over medium-high heat until smooth. Stir in pecans and coconut. Spoon the topping over the loaves while they’re still warm, allowing it to set as the bread cools.
