A tropical twist on a classic Indian dish.
Ingredients:

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 large onion, thinly sliced
2 cloves garlic, minced
1 tablespoon grated ginger
1 can (14.5 ounces) coconut milk
1 (15-ounce) can of diced pineapple in juice, drained
1/4 cup curry powder
1 teaspoon ground turmeric
1/2 teaspoon red chili powder (adjust to taste)
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
Salt and pepper to taste
Fresh cilantro for garnish

Instructions:

Prep the chicken: Marinate the chicken in a mixture of curry powder, turmeric, red chili powder, cumin, coriander, salt, and pepper for at least 30 minutes (or up to 4 hours).
Cook the onions and aromatics: Heat a large skillet over medium-high heat. Add the onion and cook until softened and golden brown. Stir in the garlic and ginger, and cook for an additional 30 seconds.
Add the coconut milk and pineapple: Pour in the coconut milk and pineapple. Bring to a simmer and cook for 5 minutes, or until the sauce thickens slightly.
Add the chicken: Add the marinated chicken to the skillet and cook until cooked through and the sauce has reduced.
Serve: Garnish with fresh cilantro and serve over rice or naan bread.
