Incredibly delicious pan-fried potatoes

Very simple way to make this better: after peeling, boiling, and “roughing up” the potato, coat them in a cornstarch slurry, then add the seasoning, then coat with olive oil and bake on a hot baking sheet. flipping over the potatoes half way through baking is important too.
