Delicious Chocolate Cupcakes with Cherry Filling

Ingredients:
For the cupcakes (9-10 pieces):

85 g butter
1 egg
100 g flour
20 g cocoa powder
85 g sugar
50 ml hot coffee
Pinch of salt
1/2 tsp baking soda
1/2 tsp baking powder
60 g sour cream (20% fat)
For the cherry filling (confit):

120 g cherries
30 g sugar
2 g cornstarch
2 g gelatin + 10 g water
For the chocolate cream:

300 g curd cheese
100 g whipping cream (33-35% fat)
50 g powdered sugar
100 g chocolate (mix of milk and dark)
Instructions:
Make the cupcake batter:

In a bowl, cream the butter and sugar together until smooth.
Add the egg and mix well.
Sift together the flour, cocoa powder, salt, baking soda, and baking powder, then gradually fold them into the mixture.
Add the hot coffee and sour cream, stirring until everything is combined.
Divide the batter into cupcake liners and bake in a preheated oven at 180°C for 20 minutes. Let cool.
Prepare the cherry filling:

Cook the cherries and sugar together over medium heat until the cherries soften.
Add the cornstarch to thicken the mixture.
Dissolve the gelatin in water and add it to the cherry mixture once it’s off the heat. Let it cool.
Make the chocolate cream:

Melt the chocolate and let it cool slightly.
Whip the curd cheese, cream, and powdered sugar until smooth.
Fold in the melted chocolate until the mixture is well-combined.
Assemble the cupcakes:

Core the cupcakes and fill the center with the cherry confit.
Top with the chocolate cream using a piping bag or spatula.
