Pork & Pumpkin Stew I Burmese Pumpkin Pork Recipe by Gastro Guru I Fall Recipes
Detailed, Step by Step recipe of this amazingly delicious dish: Pork & Pumpkin Stew - Burmese Style! Pork shoulder pcs slow cooked to perfection with onions, garlic, ginger, curry powder, pumpkin water & more. Hit with a Umami bomb; fish sauce then finished off with cooked pumpkin. Finally, garnished with fresh cilantro and fried onions. Ingredients & Recipe below:
Ingredients For Cooking Pumpkin:
1.5 LB pumpkin - peeled & seeded. Cut into 2 inch pcs
2 Tbsp Canola oil
1 Tbsp garlic paste
1 Tbsp ginger paste
4 Cups water
Salt to taste
Ingredients For Cooking Pork:
3 Lbs pork stew/shoulder pcs - cut into 2 inch pcs
3 Tbsp Canola oil
3 Onions - chopped
2 Tbsp garlic paste
2 Tbsp ginger paste
1 Tsp turmeric powder
2 Tbsp Curry powder
4 to 5 Thai chilies - finely chopped
1 Lemon grass stalk - outer cover removed then chopped in to 3 inch pcs
1 Tbsp Fish sauce
Salt to taste
Ingredients For Garnish
1/2 cup Roughly chopped cilantro
1/4 cup Fried onion
Cooking Instructions:
Heat a saucepan, add 2 Tbsp canola oil
Once oil is hot add 1 Tbsp garlic & ginger, stir fry for 30 seconds
Next add in pumpkin slice, mix well
Pour in 4 cups of water so that it soaks the pumpkin completely
Cook pumpkin on medium-low for 10 minutes then set aside after draining pumpkin water. Save water for later use
Heat a Dutch oven or large saucepan on high heat
Add 3 Tbsp canola oil. Once oil is hot reduce heat to medium
Next add in chopped onion, saute for 4 minutes
Toss in 2 tbsp each garlic and ginger pastes. Mix well
Add pork pcs, mixing well to coat them well
Add 2 tbsp curry powder and Thai chilies. Mix well then add salt to taste
Ladle in pumpkin water that we saved earlier after cooking the pumpkin
Mix well, cover with lid. Reduce heat to medium low and cook for 1.5 hours
Now open lid , check pork for doneness then add fish sauce
Add cooked pumpkin pcs. Mix well and simmer without lid for 10 minutes
Wala! Your fabulous Pork & Pumpkin Stew is Ready!
Transfer to serving bowl, garnish with chopped cilantro & fried onion slices
Serve with steamed Jasmine rice. Bon Appetit!
