Date & Saffron Ice Cream Recipe: A Creamy Delight Swirled with Caramelized Dates
Date & Saffron Ice Cream combines the luxurious flavors of saffron with the natural sweetness of dates, resulting in a unique and decadent dessert. This step-by-step recipe will guide you through the process of making this creamy, aromatic ice cream from scratch.
Ingredients:
2 cups (500 ml) full-fat milk
1 cup (250 ml) heavy cream
1/2 cup (120 ml) condensed milk (optional for extra creaminess)
1/4 teaspoon saffron threads (about 20 threads)
1/2 teaspoon ground cardamom (optional but recommended)
6 large dates, pitted and chopped
2 tablespoons sugar (for caramelizing the dates)
1/2 cup sugar (for the ice cream base)
4 large egg yolks (optional for richer texture)
1 teaspoon vanilla extract (or 1 vanilla pod)
Pinch of salt
Step 1: Infuse the Saffron
Warm the milk: Heat the milk in a medium saucepan over low heat until it’s warm but not boiling.
Add saffron: Crush the saffron threads slightly using a mortar and pestle. Add the saffron to the warm milk and let it steep for at least 10 minutes. The milk will take on a golden hue and a rich aroma. The longer you steep, the more intense the flavor.
Tip: If you want an even deeper saffron flavor, you can steep the saffron threads overnight in the milk, then proceed with the recipe.
Step 2: Prepare the Ice Cream Base
Mix cream and egg yolks: In a separate bowl, whisk together the egg yolks and 1/2 cup sugar until pale and creamy. If you prefer a lighter ice cream, you can omit the egg yolks and use 1/2 cup more heavy cream instead.
Heat milk and cream: Combine the heavy cream and saffron-infused milk in a saucepan. Heat over medium-low until small bubbles form along the edge, but don’t let it boil.
Temper the eggs: Slowly whisk a ladle of the warm milk mixture into the egg yolks to temper them (prevents curdling). Gradually add the rest of the milk mixture while whisking continuously.
Cook the base: Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens slightly. The base is ready when it coats the back of a spoon. This will take about 5-7 minutes.
Cool the mixture: Remove from heat, add the vanilla extract (or scrape the seeds from the vanilla pod), and allow the base to cool. Chill in the refrigerator for at least 4 hours or overnight for the best flavor.
Customization Tip: For added flavor complexity, try adding a pinch of ground cardamom to the base. It pairs wonderfully with saffron and dates.
Step 3: Caramelize the Dates
Chop the dates: Pit and roughly chop the dates into small chunks.
Cook the dates: Heat a small pan over medium heat, add 2 tablespoons of sugar, and allow it to melt. Once it starts to caramelize, add the chopped dates and stir until they are coated in the syrup. Cook for 2-3 minutes until the dates soften and the sugar turns into a thick caramel glaze.
Cool the dates: Remove the caramelized dates from the heat and allow them to cool completely. Set aside for swirling into the ice cream later.
Tip: For a more intense date flavor, you can soak the chopped dates in warm water for 10 minutes before caramelizing them.
Step 4: Churn the Ice Cream
Churn the base: Once your ice cream base is thoroughly chilled, pour it into an ice cream maker and churn according to the manufacturer’s instructions. This usually takes 20-30 minutes.
Add the dates: Just before the ice cream is fully churned, add the caramelized dates. You can swirl them in gently to create ripples or fully mix them in for a consistent flavor.
Customization Tip: For a crunchier texture, you can also fold in roasted pistachios or slivered almonds along with the dates for a delightful contrast.
Step 5: Freeze and Serve
Freeze: Once churned, transfer the ice cream to a container and freeze for 4-6 hours or until firm.
Serve: Scoop the ice cream into bowls or cones, garnish with a few saffron threads, extra chopped dates, or a drizzle of date syrup for presentation.
Customization Options:
Add rosewater: A few drops of rosewater can add a floral element that complements both the saffron and the dates.
Swap the dates: If you prefer other dried fruits, you can swap dates with figs or apricots for a different twist on this dessert.
Coconut Milk Variation: For a dairy-free version, substitute the milk and cream with coconut milk and coconut cream, which will add a tropical flavor to the dish.
