Quick Lasagna with Italian Sausage and Ground Beef

*Preheat the oven to 375°F (190°C).*

*Ingredients:*
- 1 pound Italian sausage
- 1 pound Butcher’s Box ground beef
- 2 jars (24 oz each) marinara sauce
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons olive oil or avocado oil
- 2 medium onions, diced
- 3 garlic cloves, minced (optional)
- 15 oz ricotta cheese
- 1 egg
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh oregano, chopped
- 2 tablespoons fresh basil, chopped
- 2 boxes no-boil lasagna noodles (oven-ready)
- Salt and pepper to taste

**Directions:**
1. **Preheat the Oven:**
- Preheat your oven to 375°F (190°C).
2. **Sauté the Onions and Garlic:**
- In a large skillet, heat 2 tablespoons of olive oil or avocado oil over medium heat.
- Add the diced onions and optional garlic cloves, sautéing until the onions become slightly translucent, about 3-4 minutes.
3. **Brown the Sausage and Beef:**
- Add the Italian sausage and ground beef to the skillet.
- Cook, stirring frequently, until thoroughly browned and cooked through.
- Drain all excess fat from the meat.
4. **Simmer the Sauce:**
- Stir in the marinara sauce and allow the mixture to simmer for 10-15 minutes, stirring occasionally.
- If needed, add up to 1/2 cup of water to reach your desired consistency. Once done, set aside.
5. **Grate the Cheeses:**
- While the meat is cooking, grate the mozzarella and Parmesan cheeses.
- Place them in separate bowls and set aside.
6. **Prepare the Cheese Filling:**
- In a mixing bowl, combine the ricotta cheese, egg, and optional minced garlic.
- Stir in the fresh basil, parsley, and oregano.
- Mix well until the ingredients are fully incorporated.
7. **Begin Assembling the Lasagna:**
- Spread 1 cup of the prepared sauce evenly along the bottom of a 9x13-inch baking dish.
8. **Layering:**
- Place a layer of no-boil lasagna noodles on top of the sauce.
- Spread a layer of the ricotta cheese filling over the noodles.
- Sprinkle a layer of shredded mozzarella, followed by a layer of grated Parmesan.
- Add a layer of diced tomatoes, then spread a layer of meat sauce over the top.
9. **Repeat the Layers:**
- Repeat the layering process, starting with another layer of lasagna noodles, followed by ricotta, mozzarella, Parmesan, diced tomatoes, and meat sauce.
10. **Top Layer:**
- For the final layer, place lasagna noodles on top.
- Spread the remaining sauce evenly over the noodles.
- Top with the remaining mozzarella and Parmesan cheese.
11. **Bake:**
- Cover the lasagna with foil and place it in the preheated oven.
- Bake for 25 minutes.
12. **Finish Baking:**
- Remove the foil and continue baking for an additional 20-25 minutes, or until the cheese is golden and bubbly.
13. **Serve and Enjoy:**
- Remove the lasagna from the oven and let it rest for a few minutes.
- Cut, serve, and enjoy! #lasagna
