**"Savor the Tradition: Mastering the Art of Persian Tripe Soup!"**
Tripe Dish (sirabi) Recipe
Ingredients:
- **Tripe (Siarabi)**: 500 grams
- **Onion**: 1 large, chopped
- **Garlic**: 4 cloves, minced
- **Chickpeas**: 1 cup (soaked overnight)
- **Kermanshahi Oil**: 3 tablespoons (or any good cooking oil)
- **Lemon Juice**: 2 tablespoons (for seasoning)
- **Salt**: to taste
- **Spices**:
- **Turmeric**: 1 teaspoon
- **Black Pepper**: ½ teaspoon
- **Mountain Spices (Advieh)**: 1 teaspoon
Instructions:
1. **Prepare the Chickpeas**: After soaking overnight, drain the chickpeas.
2. **Cook the Tripe**: In a large pot, heat the Kermanshahi oil. Add the chopped onion and sauté until golden. Then add the minced garlic and cook for another minute.
3. **Add the Tripe**: Cut the tripe into small pieces and add it to the pot. Sauté for about 5 minutes until slightly browned.
4. **Combine Ingredients**: Add the soaked chickpeas, turmeric, black pepper, and salt. Pour in enough water to cover the ingredients, and bring to a boil.
5. **Simmer**: Reduce the heat and cover the pot. Let it simmer for about 2-3 hours, or until the tripe and chickpeas are tender. Stir occasionally and add water as needed.
6. **Finish with Lemon Juice**: Once cooked, add lemon juice for seasoning and sprinkle with mountain spices.
7. **Serve**: Enjoy your delicious and hearty Tripe Dish hot, ideally with some flatbread.
