Strawberry Snack Cake

Cutting back on processed food and trying to save money by making foods from scratch as much as possible. Use up those Strawberries that aren't looking so good in your refrigerator and make this delicious snack cake. Or keep the glaze off and eat it like a strawberry muffin.

Preheat oven to 350ºF. grease and flour a square 8x8 or 9x9 inch pan
**Dice up strawberries and measure 1 cup- set to the side
3/4 cup sugar
1/2 cup milk
1/2 cup oil
**mix to dissolve sugar
1/4 cup sour cream or plain greek yogurt
2 eggs
2 teaspoons vanilla extract
**Mix
1/4 teaspoon salt
2 teaspoons baking soda
**Mix
2 cups flour
** add flour slowly and mix to just incorporated, do not over mix
Toss 1 cup of diced strawberries with 2 Tablespoons flour
**Fold strawberries into batter
**Pour into the prepared pan
**Bake about 30 minutes, until a toothpick comes out clean. I started checking around the 25 minute mark
**Cool in the pan 10 minutes then remove from the pan and finish cooling on a cooling rack
Once cooled, top with a glaze if desired.

Strawberry Glaze
1/4 cup finely diced strawberries
1 Tablespoon melted butter
1/2 cup powdered sugar
1/4 teaspoon vanilla extract
**MIx, mix, mix
1/4-1/2 cup more powdered sugar
1/4 teaspoon more vanilla extract
**Mix well and top cake
