Curried Chicken with Vegetables RECIPE

6 large boneless skinless chicken thighs (can be bone in)
(or 8 - 10 small ones)
1 can coconut milk
1 orange bell pepper
1 red bell pepper
1 purple onion
1 bag of sliced carrots or slice 2 - 3 carrots
1 - 2 T Yellow Curry
1 T + 1 t minced garlic (see how to make your own in one of my videos)
1 - 2 cups pinapple (optional)
1 t Better than Bouillon chicken soup base
1/2 cup water (optional) depends whether you like the sauce thick
salt
pepper
olive oil

Condiments (optional but well worth it!)

chopped cilatro
chopped cashews or peanuts
golden raisins

Add salt, pepper, and 1 T of fresh minced garlic onto your chicken thighs. Brown on both sides until chicken is almost done. Take out of pan (don't worry, you will be putting them back into the pan to cooks some more) .

Add to pan carrots, onion, salt, and 1 t garlic. Let cook for 5 mins. Add peppers, coconut milk, 1/2 cup of water (optional), 1 t of soup base, and 1 - 2 T yellow curry powder. Simmer a couple minutes. Add chicken back in and simmer on low heat for 10 - 20 minutes. Add pineapple before serving and heat thru.

You do not want veggies to overcook! You still want the peppers firm. So simmer on low heat!

chop up your condiments and let your guests apply as they would like.
Serve with brown or white rice
