Cajun garlic parmesan chicken Alfredo

3-4 chicken breasts
Tbsp of extra virgin olive oil
3 Tbsp of Cajun seasoning
3 Tbsp of butter
1 onion finely chopped
3 garlic cloves minced
250 ml of boiling chicken stock
400 ml of partially skimmed milk
3 ounces of parmesan cheese
2 Tbsp of cream cheese
Pepper to taste
3 ounces of heavy cream
2 ounces of finely chopped parsley
300 grams of spaghetti

DIRECTIONS

1.Preheat oven to 365 degrees F
2.Place chicken breasts in large baking dish and drizzle with olive oil and Cajun seasoning, coat chicken breast then bake for 25 minutes.
3.Heat unsalted butter in a large pan, then add onion-fry until soft, about 5 minutes, then add garlic and sauté for 1 minute. Add boiling chicken stock and partially skimmed milk , stir to combine, then bring to simmer and reduce for 10-15 minutes stirring regularly. Avoid burning milk.
4.Bring a large saucepan of water to a boil and add spaghetti. Cook until al dente.
5.Once the sauce is reduced, add Cajun seasoning and Parmesan cheese, cream cheese and heavy cream.
6.Remove and thinly slice chicken. Serve pasta immediately with Cajun chicken on top of pasta.
