Pancakes
Ingredients:
• 1 cup Amish zucchini flour
• 1/2 cup all-purpose flour
• 2 tablespoons granulated sugar
• 2 teaspoons baking powder
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 1 egg
• 1 cup milk
• 2 tablespoons melted butter
Instructions:
1. In a large bowl, whisk together the zucchini flour, all-purpose flour, sugar, baking powder, baking soda, and salt.
2. In a separate bowl, whisk together the egg, milk, and melted butter.
3. Pour the wet ingredients into the dry ingredients and stir until just combined.
4. Heat a non-stick skillet over medium heat and cook the pancakes until golden brown on both sides.
Muffins
Ingredients:
• 1 cup Amish zucchini flour
• 1/2 cup all-purpose flour
• 1/2 cup granulated sugar
• 1 teaspoon baking powder
• 1/4 teaspoon salt
• 1 teaspoon cinnamon
• 1 egg
• 1/2 cup milk
• 1/4 cup vegetable oil
• 1 teaspoon vanilla extract
Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a large bowl, whisk together the zucchini flour, all-purpose flour, sugar, baking powder, cinnamon, and salt.
3. In a separate bowl, whisk together the egg, milk, vanilla extract, and vegetable oil.
4. Add the shredded zucchini to the wet ingredients and stir to combine.
5. Pour the wet ingredients into the dry ingredients and stir until just combined.
6. Divide the batter evenly among muffin cups and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Bread
Ingredients:
• 2 cups zucchini flour
• 1 cup all-purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1 teaspoon salt
• 1 cup warm water
• 2 tablespoons olive oil
• 1 tablespoon honey
Instructions:
1. In a large bowl, whisk together the zucchini flour, all-purpose flour, baking powder, baking soda, and salt.
2. In a separate bowl, combine the warm water, olive oil, and honey.
3. Add the wet ingredients to the dry ingredients and stir until just combined.
4. Turn the dough out onto a floured surface and knead for 5-7 minutes.
5. Place the dough in a greased loaf pan and let it rise in a warm place for 1 hour.
6. Bake the bread in a preheated oven at 375°F (190°C) for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
