The Easiest Chicken and Rice You'll Ever Make—Here's How! Lisa Jo, your essential oil girl-surprise

Hey everyone, Lisa Jo here, your essential oil girl! How's it going? So, the other day I admitted I'm no chef, but guess what? I managed to whip up something in the kitchen, and I thought, why not share it with all of you? Especially for those who feel a bit challenged in the culinary department. Today, it's all about my go-to dish—chicken and rice, the one recipe I'm proud to say I've mastered.

Here's a little step-by-step for you. First things first, preheat your oven to 350 degrees. You'll need a glass baking dish for this. The stars of the show are boneless chicken thighs—I find they're juicier and pack more flavor than breasts, which tend to dry out. Now, for the creamy goodness, grab two cans of cream of chicken soup (or mushroom, if you prefer). Empty these into your baking dish.

Next up, it's time for the rice. I love using the pre-packaged rice bags these days—they're just the right size for the dish. If you're using loose rice, just measure it using the empty soup can for perfect proportions. For this recipe, I mix two cans of the soup with an equal amount of water, then add two bags of rice.

Mix everything in the pan to even out those lumpy bits from the soup. Lay your chicken thighs over this mixture, season with salt, pepper, and a sprinkle of lemon pepper for that zesty kick. Now, just pop it into the oven. I let it bake for about an hour or so, just to make sure everything is perfectly cooked through.

[Shows the dish] Look at this! Simple, yet so satisfying. This batch will sort me out for several meals, which is great, especially since the boyfriend isn't around to share this round.

Now, while I'd love to enhance my dishes with essential oils, I tend to go a bit overboard with them. They're potent, and a little goes a long way, so maybe it's best I stick to simple seasoning for now.
