Here’s a delicious recipe for Cinnamon Cherry Cobbler. This dessert combines the tartness of cherries with the warmth of cinnamon, all topped with a buttery, biscuit-like crust.
Cinnamon Cherry Cobbler
Ingredients:
For the Cherry Filling:
4 cups fresh or frozen cherries (pitted)
1 cup granulated sugar
1 tablespoon lemon juice
2 tablespoons cornstarch
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
For the Cobbler Topping:
1 cup all-purpose flour
1/2 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, cold and cut into small pieces
1/2 cup milk
1/2 teaspoon vanilla extract
Instructions:
Preheat the Oven:
Preheat your oven to 375°F (190°C).
Prepare the Cherry Filling:
In a large mixing bowl, combine the cherries, sugar, lemon juice, cornstarch, vanilla extract, and ground cinnamon. Toss everything together until the cherries are well coated.
Pour the cherry mixture into a 9x9-inch (or similar size) baking dish, spreading it out evenly.
Make the Cobbler Topping:
In another bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
Add the cold butter pieces to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
Stir in the milk and vanilla extract until just combined. The dough will be slightly sticky.
Assemble the Cobbler:
Drop spoonfuls of the cobbler topping over the cherry filling. It’s okay if some of the cherries are still visible; the topping will spread as it bakes.
Bake:
Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the cherry filling is bubbling.
Cool and Serve:
Allow the cobbler to cool slightly before serving. It’s delicious served warm with a scoop of vanilla ice cream or a dollop of whipped cream.
