This hearty and creamy Shepherd's Pie is so delicious and easy. It's also a great way to use up leftovers.

SHEPHERDS PIE
1 lb hamburger
1 cup chopped onion
1/2 tsp salt
1/4 tsp pepper
brown and drain
Mix in 2 TBLS all-purpose flour

Add:
1 cup beef broth
1 1/2 TBLS tomato paste
1 tsp garlic powder
1 TBLS soy sauce (or worcestershire sauce)
Heat until it's bubbly
Add:
1/2 cup frozen peas
1/2 cup finely diced carrots
Cook until the vegetables are almost soft (about 5 minutes)

Place in the bottom of a 7x11 baking dish

Mix together:
4 cups mashed potatoes
1/4 cup shredded parmesan cheese
Spread on top of the hamburger mixture
Sprinkle with dried parsley leaves
Bake on 350 for 25 minutes or until it's bubbly
Top with shredded cheddar cheese and bake until cheese is melted
Let rest for 10 minutes before serving.

These measurements can be adjusted to fit your tastebuds or the ingredients you have on hand.
