Lemon Chess Pie

Lemon Chess Pie has the perfect balance of sweet and tart. The Lemon Chess Pie is a custard type pie and has a different texture from that of other Lemon Pies like Lemon Meringue that have a gelatinous texture. A quick and easy Lemon pie to make and can also be frozen...remove from freezer to the refrigerator to thaw overnight.

One 9 inch pie crust (not Deep Dish)
LEMON CHESS PIE FILLING INGREDIENTS
1 2/3 Cups Granulated Sugar
1/2 Tsp Salt
1 TBSP Yellow Cornmeal
1 1/2 TBSP Corn Starch (or 3 TBSP Flour)
6 TBSP Melted Butter
3/4 Cup Lemon Juice (juice of about 3 Large Lemons)
5 Large Eggs
Pinch of Lemon Zest, optional
