Make Ahead Dinner Rolls | No Special Equipment Required

An easy, fluffy, and delicious Yeast Roll that can be made ahead of time. This Yeast Dinner Roll Dough can be made ahead and refrigerated for a couple of days, or rolls can be baked and frozen. No stand mixer needed.
This recipe comes from Ms. Carole Miller Radford and was originally published in the November 1995 issue of Southern Living Magazine
Dinner Roll Ingredients
Step 1- Activate the Yeast
1/4 Cup Warm Water
4 1/2 Teaspoons Instant Dry Yeast, or 2 packages active dry yeast
Step 2- Form the Dough: add the Yeast Mixture to
2 Cups AP or Bread Flour
1 Cup Warm Water
1/2 Cup Sugar
2 Tsp Salt
3 Large Eggs, beaten
1/2 Cup melted Shortening
Step 3- Combine above ingredients and beat by hand for 2 Minutes
Step 4- Stir in 2 to 2 1/2 Cups additional flour to form a soft dough (2 always works for me)
Step 5- Place in a warm area to rise and double in size
Step 6- Refrigerate dough at least 8 hours
Step 7- Remove dough from the refrigerator and shape into rolls
Step 8- Let rolls rise until doubled in size, about a 1 1/2 hours
Step 9- Bake at 375 degrees for 12 minutes or until Golden Brown
