Lots of Tomatoes, Basil, and Cheese in this Savory Summer Pie
To help prevent a soggy bottom on your Tomato Pie...
1- Salt the tomato slices and let sit in a Colander for 45 minutes to drain excess moisture. Then lay out on paper towels for a few more minutes to absorb more of the liquid.
2- Select a meaty variety of Tomato, like a plum tomato
3- Sprinkle a little bit of shredded cheese on the crust or spread a layer of Pimento Cheese on the crust
Tomato Pie Ingredients:
1 9-inch Deep Dish Pie Crust
4-5 Plump Ripe Tomatoes
1 Tsp Salt
1/2 Cup Fresh Basil Chiffonade, or 1 1/2 TBSP Dried Basil
1/2 Vidalia Onion, chopped
1 Large Clove Garlic, chopped
8 slices Swiss or Gruyere Cheese or some Shredded Mozzarella Cheese
Pepper to Taste
Tomato Pie Topping: *can use Pimento Cheese Spread for the Topping
1 Cup Mayonnaise
8 ounces shredded Cheddar Cheese
1 slightly beaten large Egg
1/2- 1 Tsp Hot Sauce, optional
1/2 Cup Grated Parmesan Cheese

*can use Pimento Cheese Spread for the Topping
