HARVARD BEETS
4 cans (15 oz) of cut beets - drain, reserve 1 1/2 cup beet juice

Combine the following in a saucepan -
3/4 cup sugar
1 1/2 tsp salt
6 TBLS corn starch
Add -
1/2 cup beet juice
3/4 cup vinegar or lemon juice
Mix well and bring to a boil
Cook until thickened
Add the 4 cans of cut beets
Heat until the beets are hot
Remove from heat
Add 3 TBLS butter or margarine
Ready to serve!
