Lemongrass Tempura Fish:
Ingredients:
1 pound fish filet (such as salmon or tilapia)
2 lemon grass stalks, minced
4 garlic cloves, minced
2 tablespoons fish sauce
2 tablespoons soy sauce
2 tablespoons sugar
2 tablespoons lime juice
2 tablespoons vegetable oil
1 teaspoon black peppercorns, crushed
Fresh cilantro leaves (optional), for garnish
Fresh red chilli peppers (optional), for garnish

Instructions:
1. Rinse the fish filet and pat dry with paper towels. Cut the filet into portions.
In a large bowl, combine the minced lemon grass, garlic, fish sauce, soy sauce, sugar, lime juice, vegetable oil, and crushed peppercorns. Mix well.

2. Place the fish portions in the bowl and turn to coat in the marinade. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours.

3. Heat a large skillet over medium heat. Remove the fish portions from the marinade and place them in the skillet. Discard the remaining marinade.

4. Cook the fish portions for 3 to 4 minutes on each side, or until they are golden brown and fully cooked.

5. Transfer the cooked fish to a serving platter and garnish with fresh cilantro leaves and red chilli peppers, if desired.

6. Serve the lemon grass fish filet hot with steamed rice and vegetables. Enjoy!

Delicious Tempura Shrimp:

Ingredients:
-1 cup all-purpose flour
-1/2 teaspoon baking powder
-1/4 teaspoon salt
-1 cup cold water
- 1 to 2 eggs beaten
-Vegetable oil, for frying
-12 large shrimp, peeled and deveined

Instructions:
1. In a medium bowl, whisk together the flour, baking powder, and salt.

2. Gradually add the cold water, stirring until the batter is smooth.

3. Heat the oil in a deep pan over medium heat until it reaches 375°F.

4. Dip each shrimp into the batter, making sure it is well coated.

5. Gently place the battered shrimp into the hot oil and cook until golden brown, about 2 minutes.

6. Remove the shrimp with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

7. Serve the tempura shrimp hot with the dipping sauce of your choice. Enjoy!

Ingredients:
1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 large egg
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract

Instructions:
1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.

3. Pour the wet ingredients into the dry ingredients and stir until just combined (don't overmix or the pancakes will be tough).

4. Heat a nonstick pan or griddle over medium heat. Once hot, scoop about 1/4 cup of batter for each pancake onto the pan or griddle.

5. Cook the pancakes for 2 to 3 minutes on each side, or until bubbles form on the surface and the edges look set.

6. Flip the pancakes and cook for another 1 to 2 minutes on the other side, or until golden brown.

7. Repeat the process with the remaining batter.
