Chilli Peanut Chicken with Rice:
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1/4 teaspoon red pepper flakes (adjust to taste)
- Salt and pepper to taste
- Cooked rice for serving
Instructions:
In a bowl, whisk together the peanut butter, soy sauce, honey, garlic, ginger, and red pepper flakes. Set aside.
Season the chicken breasts with salt and pepper on both sides.
Heat some oil in a large skillet over medium-high heat.
Add the chicken breasts to the skillet and cook for about 6 minutes per side or until they are cooked through.
Pour the prepared peanut sauce over the cooked chicken in the skillet.
Reduce heat to low and let it simmer for about 5 minutes until heated through and thickened slightly.
Serve the Chilli Peanut Chicken over cooked rice.
