Crispy Tofu Salad with Zucchini and Spinach (1 Portion)
Ingredients
For the Salad:

75 grams firm tofu, cut into small squares
1 medium zucchini, cut into small squares
1/2 cup fresh spinach, chopped
For the Dressing:

2 tablespoons soy sauce
2 tablespoons rice vinegar
1/4 teaspoon chili flakes
1/2 teaspoon sumac
1/4 teaspoon ginger powder
1 clove garlic, minced
For Cooking:

Olive oil for frying
Instructions
Prepare the Tofu:

Heat a non-stick pan over medium heat and add a drizzle of olive oil.
Add the tofu squares to the pan and cook until golden brown on both sides, about 5-7 minutes. Remove from heat and set aside.
Prepare the Vegetables:

Cut the zucchini into small squares and chop the spinach.
Make the Dressing:

In a small bowl, whisk together soy sauce, rice vinegar, chili flakes, sumac, ginger powder, and minced garlic.
Assemble the Salad:

In a bowl, combine the cooked zucchini, chopped spinach, and crispy tofu.
Drizzle the dressing over the salad and toss gently to combine.
