Italian Beef
Recipe:
Chuck Roast 2.5lbs or whatever yours is
Salt and pepper on both sides.
Rub on some olive oil then about a tablespoon of all purpose flour
on both sides.
In your frying pan set to medium high we are going to sear
the chuck roast for about 5 minutes a side get some golden
color.
Now place your roast into a pressure cooker
add 2 medium size chopped onions
3 medium carrots, 2 big celery stalks
then add about 6 cloves of garlic, roasted if you got it
I added a tablespoon of the roasted garlic oil.
2 teaspoons of red pepper flake
2 teaspoon of oregano
2 teaspoons of rosemary
10-12 pepperoncini
about 3/4 cup of the juice from the jar
3 bay leaves
salt and pepper 1 carton of Beef Stock
place your lid, remember to seal the pressure tab
cook for 65 minutes
After steam is released,
separate the meat from the veg, strain the juice.
let your meat cool a little.
chop up your strained veggies, add red pepper flake
for a little more heat.
add meat to hoagie roll, add giardiniera
add provolone, place in baking dish
and bake in preheated oven set to 400
for 8 minutes.
Plate and serve with juice for dipping, dunking,
splashing!
