Custard Slice Recipe
Ingredients:
For the Pastry:

2 sheets of puff pastry
1 tablespoon icing sugar (for dusting)
For the Custard:

2 cups whole milk
1/2 cup heavy cream
3/4 cup granulated sugar
1/3 cup cornstarch
2 tablespoons all-purpose flour
4 large egg yolks
2 teaspoons vanilla extract
For the Icing:

1 cup icing sugar
2 tablespoons water or lemon juice (to adjust consistency)
Instructions:
1. Prepare the Pastry:

Preheat your oven to 200°C (390°F).
Place the puff pastry sheets on a baking tray lined with parchment paper.
Prick the pastry sheets all over with a fork to prevent them from puffing up too much.
Bake for 10-15 minutes or until golden brown.
Remove from the oven and allow to cool completely.
2. Make the Custard:

In a medium saucepan, combine the milk and cream. Heat over medium heat until it starts to simmer.
In a separate bowl, whisk together the sugar, cornstarch, flour, and egg yolks until smooth.
Slowly pour the hot milk mixture into the egg mixture, whisking constantly to prevent the eggs from curdling.
Return the mixture to the saucepan and cook over medium heat, stirring constantly, until the custard thickens and begins to boil.
Remove from heat and stir in the vanilla extract.
Let the custard cool slightly, then cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Allow it to cool completely.
3. Assemble the Custard Slice:

Place one sheet of puff pastry on a serving plate.
Spread the cooled custard evenly over the pastry.
Top with the second sheet of puff pastry.
Press down gently to ensure the layers stick together.
4. Prepare the Icing:

In a small bowl, mix the icing sugar with water or lemon juice until smooth and spreadable.
Spread the icing over the top layer of pastry.
5. Chill and Serve:

Refrigerate the custard slice for at least 2 hours, or until set.
Once chilled, cut into slices using a sharp knife.
Dust with additional icing sugar before serving, if desired.
