CHIVE & ONION POTATO DUMPLINGS 🌱

I’ve seen these dumplings absolutely everywhere & it was about time I made my own version ! I flavoured mine with onion, garlic & chives before cooking then served them with a sizzling chilli oil & they were dreeeeamy (and let’s be honest that lil mushroom shape is cute af x)

ingredients (makes 8 dumplings)

400g potatoes, peeled & cubed
1/2 tsp garlic granules
1/2 tsp onion granules
small handful of chives, finely chopped
120g cornflour (aka corn starch)
1/2 tsp salt

chilli oil:

1 tbsp crispy chilli oil
1/2 tbsp gochugaru
1 garlic clove, minced
1 spring onion, finely chopped
1 tbsp tamari (or soy sauce)
1/2 tbsp black vinegar
1/2 tbsp agave (or maple syrup)
3 tbsp cooking oil

method

1. boil the potatoes until tender then mash very thoroughly
2. stir in the garlic granules, onion granules, chives & salt before adding the cornflour then mix to form a dough
3. roll into 8 balls then press with the top of a bottle to make an indent (like a mushroom shape)
4. boil in salted water until they float then drain & transfer to a serving bowl
5. top with all the chilli oil ingredients, apart from the cooking oil, heat this until smoking then pour over the dumplings (aim for the aromatics)
6. give everything a good stir & enjoy!
