Pizzaiola Bread Recipe Alert! 🔔

Ingredients for 1 small loaf (about 6 slices):

* 150g (3/4 cup) red lentils
* 40ml (2.5 tablespoons) water
* 2 tablespoons psyllium husk
* 1 tablespoon tomato paste
* 1 teaspoon baking powder
* Paprika and oregano (optional)
* Salt & pepper to taste
* Handful of fresh parsley
* 3-4 sun-dried tomatoes
* Handful of olives

Method:
1. Soak the red lentils overnight or for a few hours. Drain and rinse.
2. Add the lentils to a food processor with psyllium husk, baking powder, water, spices, tomato paste, and salt. Pulse until you reach a creamy consistency.
3. Let the mixture sit for 20-30 minutes.
4. Chop the olives, sun-dried tomatoes, and parsley. Add them to the mixture and combine well.
5. Transfer the mixture onto a baking sheet lined with parchment paper and shape it into a round loaf. Wet your hands with oil to help smooth the surface.
6. Sprinkle with sesame seeds if desired.
7. Bake in a preheated oven at 180°C (350°F) for 30-40 minutes.
8. Enjoy warm for the best taste! Store in the fridge for a couple of days and toast before eating for extra deliciousness. This bread is also suitable for freezing.
