Choc-crackle peanut butter cups
Choc-crackle peanut butter cups are a delightful twist on traditional peanut butter cups, combining the rich, creamy taste of peanut butter with the crunchy texture of chocolate crackles. Here's a recipe to make these delicious treats:
Ingredients
For the Chocolate Crackle Layer:
2 cups Rice Krispies or puffed rice cereal
1 cup dark or milk chocolate chips
1/4 cup coconut oil
1/4 cup desiccated coconut (optional)
For the Peanut Butter Layer:
1 cup creamy peanut butter
1/4 cup powdered sugar
1/4 cup coconut oil
1 teaspoon vanilla extract
Pinch of salt
Instructions
Prepare the Chocolate Crackle Layer
Melt the Chocolate and Coconut Oil: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.
Mix in the Cereal: Add the Rice Krispies (and desiccated coconut if using) to the melted chocolate mixture. Stir until the cereal is fully coated with the chocolate.
Fill the Cupcake Liners: Line a muffin tin with cupcake liners. Spoon a layer of the chocolate crackle mixture into each liner, filling about 1/3 of the way. Use the back of a spoon to press the mixture down and make an even layer.
Chill: Place the muffin tin in the refrigerator for about 10 minutes, or until the chocolate crackle layer is set.
Prepare the Peanut Butter Layer
Combine Ingredients: In another bowl, mix together the peanut butter, powdered sugar, coconut oil, vanilla extract, and salt until smooth and well combined.
Layer the Peanut Butter: Once the chocolate crackle layer is set, spoon a generous amount of the peanut butter mixture on top, filling the liners almost to the top.
Smooth the Top: Use a spoon or spatula to smooth the top of the peanut butter layer.
Final Chocolate Crackle Layer
Add the Final Layer: Spoon the remaining chocolate crackle mixture over the peanut butter layer, gently pressing it down to ensure it sticks.
Chill Again: Place the muffin tin back in the refrigerator for at least 30 minutes, or until the cups are fully set and firm.
Serve and Enjoy
Remove from Liners: Once set, remove the cups from the liners.

Tips
Storage: Store in an airtight container in the refrigerator to keep them firm.
