RED GODDESS SALAD 🔥

Green goddess is great, but have you ever tried a RED GODDESS SALAD...?

Instead of green veg, we’re using all things red + pink, then topping with the creamiest red goddess dressing.

ad | @oxo.europe challenged me to put my spin the much loved green goddess salad, so I decided to get creative. I used their garlic press to crush my garlic, and zester for my lemon. Then once the dressing was done, I poured into my salad dressing shaker, which is great for mixing + storing.

I’ve written my full recipe below - so enjoy, and let me know if you give it a go!

INGREDIENTS (serves 4-6)

1/2 red cabbage
4 cooked beetroots
1 red onion
2 red peppers

1 jar sun dried tomatoes (+ oil)
100g cashews
1 shallot
4 tbsp nutritional yeast
2 garlic cloves
1 lemon (juice + zest)
30g fresh basil
Splash of water (to loosen)

Salt
Pepper

METHOD

1. For the red goddess dressing, combine the sun dried tomatoes + their oil, cashews, chopped shallot, nutritional yeast, crushed garlic, lemon juice + zest, fresh basil + 2 cooked beetroots. Blend until creamy + smooth, then season to taste with salt + pepper. Loosen with a splash of water if needed.
2. For the salad, finely chop the cabbage, beetroot, onion + peppers.
3. In a large bowl, add the chopped veg, then pour over enough dressing to completely cover. Garnish with fresh basil, then enjoy!
