“STEAK” GYROS 🥙
Ingredients
1 lions mane mushroom
1 tomato
Pickled onions
Coriander
Hot sauce
Pita bread
For the steak marinade:
2 tbsp beetroot juice
1 tsp garlic powder
1 tbsp soy sauce
1 tsp onion powder
1 tbsp smoked paprika
Salt and pepper
2 tbsp olive oil
For the tzatziki:
4 tbsp vegan Greek yoghurt
Half a cucumber
Handful of mint
1 garlic clove
Glug of olive oil
Juice of half a lemon
Salt
Method:
1. So to start we’re going to drizzle some oil and some salt in a skillet and get the mushroom in the pan to get used to it. Spread it round the pan to bring it up to heat. Get another pan and rest it on top of the mushroom, but don’t press.
2. Take the top pan off, move it around the pan again and repeat. Now flip the mushroom over and it should have a slight sear to it. Repeat the process on the other side. It should become a steak shape.
3. Now mix together your marinade ingredients for the steak in a container. Get the steak in there and drown it in the marinade. Get it in all the nooks and cranny’s. Then place in the fridge.
4. Mix together your tzatziki ingredients. Pickle your onions and chop up your tomato.
5. Now get the steak out the fridge, add some more oil to the skillet and fry off the mushroom again for 3/4 mins each side or until charred. You can also do this on a bbq.
6. Heat up your pita, load on the tzatziki and the steak and fresh veg, top with hot sauce and enjoy!
