Instant Pot Salmon with Garlic Potatoes and Greens:
Here's a delicious and easy recipe for Instant Pot Salmon with Garlic Potatoes and Greens:
Ingredients
For the Garlic Potatoes:
1 lb baby potatoes, halved
4 cloves garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
1 cup vegetable or chicken broth
For the Salmon:
4 salmon fillets
Salt and pepper to taste
1 tablespoon olive oil
1 lemon, sliced
Fresh dill or parsley for garnish (optional)
For the Greens:
4 cups baby spinach or kale
1 tablespoon olive oil
Salt and pepper to taste
1 clove garlic, minced
Instructions
Prepare the Garlic Potatoes:
Turn on the Instant Pot and select the "Sauté" function. Add the olive oil and minced garlic, sautéing until fragrant (about 1 minute).
Add the halved baby potatoes, salt, and pepper. Stir to coat the potatoes in the garlic and oil.
Pour in the vegetable or chicken broth, then cancel the "Sauté" function.
Cook the Potatoes:
Place a trivet over the potatoes inside the Instant Pot.
Close the lid, ensuring the valve is set to "Sealing." Select "Manual" or "Pressure Cook" on high pressure for 5 minutes.
Once the cooking time is complete, perform a quick release of the pressure by carefully turning the valve to "Venting."
Prepare the Salmon:
While the pressure is releasing, season the salmon fillets with salt, pepper, and a drizzle of olive oil.
Once the pressure has fully released, open the lid and place the salmon fillets on top of the trivet. Add lemon slices on top of the salmon.
Cook the Salmon:
Close the lid again, making sure the valve is set to "Sealing." Select "Manual" or "Pressure Cook" on high pressure for 3 minutes.
Once the cooking time is complete, perform a quick release of the pressure by carefully turning the valve to "Venting."
Prepare the Greens:
While the salmon is cooking, heat olive oil in a large pan over medium heat.
Add minced garlic and sauté until fragrant (about 1 minute). Add the greens (spinach or kale) and sauté until wilted and tender, seasoning with salt and pepper to taste.
Serve:
Carefully remove the salmon and potatoes from the Instant Pot. Serve the salmon fillets over the garlic potatoes, accompanied by the sautéed greens.
Garnish with fresh dill or parsley if desired, and enjoy!
