Shredded, Saucy BBQ Chicken Sammies
Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
1 cup BBQ sauce (your favorite brand)
1/2 cup chicken broth
1 onion, finely chopped
3 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 tablespoon apple cider vinegar
1 teaspoon smoked paprika
1 teaspoon chili powder
Salt and pepper to taste
For the Sammies:
4 sandwich rolls or buns
1 cup coleslaw (store-bought or homemade)
Pickles (optional)
Extra BBQ sauce for serving
Instructions:
Prepare the Chicken:
Place the chicken breasts in a slow cooker or instant pot.
In a mixing bowl, combine the BBQ sauce, chicken broth, chopped onion, minced garlic, Worcestershire sauce, apple cider vinegar, smoked paprika, chili powder, salt, and pepper. Mix well.
Pour the sauce mixture over the chicken breasts, ensuring they are well coated.
Cooking:
Slow Cooker: Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and easily shredded.
Instant Pot: Cook on high pressure for 15 minutes, then allow natural release for 10 minutes before quick-releasing the remaining pressure.
Shred the Chicken:
Once cooked, remove the chicken breasts from the cooker and shred them using two forks.
Return the shredded chicken to the cooker and mix it well with the sauce.
Assemble the Sammies:
Toast the sandwich rolls or buns lightly.
Place a generous portion of shredded BBQ chicken on the bottom half of each roll.
Top with coleslaw and pickles if using.
Drizzle extra BBQ sauce over the chicken if desired.
Place the top half of the roll on top and press gently.
Serve:
Serve the BBQ chicken sammies immediately with your favorite sides like potato chips, fries, or a fresh salad.
