1. Baked Chicken with Vegetables
Ingredients:
Chicken breasts or thighs
Mixed vegetables (such as carrots, broccoli, and bell peppers)
Instructions:
Preheat your oven to 375°F (190°C).
Place the chicken breasts or thighs on a baking sheet.
Surround the chicken with the mixed vegetables.
Drizzle with olive oil and season with salt and pepper to taste.
Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
2. Shrimp and Asparagus Stir-Fry
Ingredients:
Shrimp (peeled and deveined)
Asparagus (trimmed and cut into 2-inch pieces)
Instructions:
Heat a large skillet or wok over medium-high heat with a tablespoon of oil.
Add the shrimp and cook for 2-3 minutes until they start to turn pink.
Add the asparagus pieces and continue to cook for another 3-4 minutes until the shrimp are fully cooked and the asparagus is tender-crisp.
Season with salt, pepper, and a squeeze of lemon juice if desired.
