Homemade Cinnamon Rolls are so, so good! The Vanilla icing is Dorothy's preference and the Caramel icing is what Martha prefers. They freeze very well.

CINNAMON ROLLS & 2 ICINGS
2 packages dry active
/2 cup very warm water
3/4 cup scalded milk
1/3 cup melted butter or margarine, room temperature
1/4 cup granulated sugar
1 teaspoon salt
2 eggs, room temperature
4 1/4 cup bread flour
Pour yeast into a bowl and add 1 teaspoon sugar. Pour very warm water over yeast mixture and give a light stir. Set aside.
Scald milk. In a large bowl mix butter and scalded milk together.
Add sugar, salt, eggs and mix well.
Add yeast mixture and give a light stir.
Mix flour and wet ingredients together.
Cover and let rise in a warm place until doubled.
Roll out the dough, spread with softened butter and sprinkle with light brown sugar and cinnamon. Nuts and raisins are an option.
Roll up like a jelly roll and slice.
Place into prepared baking pans.
Bake 350* 20 minutes

WHITE VANILLA ICING
3/4 cup 10x sugar
1/2 teaspoon vanilla extract
1 Tablespoon milk
Mix well and spread over warm cinnamon rolls

CARAMEL ICING
Melt 1 1/4 stick butter or margarine in a sauce pan
Add 1/14 cup light brown sugar
Bring to a boil and stir over a medium heat for 2 minutes
Add 2/3 cup canned pet milk
Bring to a boil again and remove from heat.
Add 1/4 teaspoon vanilla extract
4 1/2 cups 10x sugar
Mix well
Spread over warm rolls
You can sprinkle top with nuts or raisins
