Garbage fries, also known as "loaded fries," are a popular indulgence in New York, combining crispy fries with a variety of delicious toppings. Here's a simple guide to making New York-style garbage fries at home:
Ingredients
For the Fries
4 large russet potatoes
Vegetable oil for frying (or use frozen fries for convenience)
Salt to taste
Toppings
1 cup shredded cheddar cheese
1 cup cooked and crumbled bacon
1/2 cup sour cream
1/4 cup sliced green onions
1/4 cup diced tomatoes
1/4 cup pickled jalapeños
1/4 cup black olives
1/2 cup chili (optional)
Ranch dressing (optional)
Hot sauce (optional)
Instructions
Preparing the Fries
Cut the Potatoes: Wash and peel the potatoes. Cut them into thin strips or wedges, depending on your preference.
Soak the Potatoes: Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.
Dry the Potatoes: Drain the potatoes and pat them dry with paper towels.
Fry the Potatoes:
First Fry: Heat oil in a deep fryer or a large pot to 325°F (165°C). Fry the potatoes in batches for about 3-4 minutes until they are soft but not browned. Remove and drain on paper towels.
Second Fry: Increase the oil temperature to 375°F (190°C). Fry the potatoes again in batches for about 2-3 minutes until they are golden brown and crispy. Remove and drain on paper towels. Sprinkle with salt.
Assembling the Garbage Fries
Preheat the Oven: Preheat your oven to 400°F (200°C).
Layer the Fries: Spread the freshly fried or oven-baked fries on a large baking sheet or oven-safe dish.
Add Cheese: Sprinkle shredded cheddar cheese evenly over the fries.
Melt the Cheese: Place the fries in the preheated oven for about 5-7 minutes, or until the cheese is melted and bubbly.
Add Toppings: Remove the fries from the oven and add the toppings. Start with the crumbled bacon, followed by sour cream, green onions, tomatoes, jalapeños, and black olives. If you’re using chili, add it on top of the cheese before placing it in the oven.
Finish with Sauces: Drizzle with ranch dressing and hot sauce if desired.
Serving
Serve the garbage fries hot, straight from the oven. They make a great appetizer, party food, or even a main course when you’re craving something indulgent and delicious.
