Ingredients:
For the fries:
1 bag of frozen French fries (or make your own from fresh potatoes)

For the beer cheese sauce:
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup beer (a mild lager or ale works well)
1 cup milk
2 cups shredded cheddar cheese
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
Salt and pepper (to taste)
Instructions:
Prepare the Fries:

Cook the French fries according to the package instructions or your preferred method. If using fresh potatoes, cut them into fries, season with salt, and bake or fry them until golden and crispy.
Make the Beer Cheese Sauce:

In a medium saucepan, melt the butter over medium heat.
Add the flour and whisk continuously for about 1-2 minutes to make a roux, until it's slightly golden and smells nutty.
Gradually whisk in the beer, ensuring there are no lumps. Cook for another 1-2 minutes.
Slowly add the milk, whisking continuously until the mixture is smooth and begins to thicken.
Reduce the heat to low, and gradually stir in the shredded cheddar cheese until completely melted and smooth.
Add the Dijon mustard, garlic powder, salt, and pepper to taste. Stir well to combine.

Place the cooked fries on a serving platter.
