🍪Chickpea cookie dough🍪 So I’ve seen this chickpea cookie dough doing the rounds and had to give it a try. I was pretty skeptical it was going to be gross but honestly, I was pleasantly surprised.

To make, you need:

400g cooked chickpeas
1/4 cup oat flour (I just blended oats in the food processor)
1/4 cup tahini
1tsp vanilla extract
2tbsp maple syrup (you can add more if you need)
1tbsp brown sugar
1tbsp peanut butter
Pinch of salt
Dark chocolate chips

-rinse and dry your chickpeas
-add to a blender or food processor with all other ingredients bar the chocolate chips
-once you’ve reached desired consistency, mix through the chocolate chips
-serve on it’s own or roll into little balls and store in Tupperware in the fridge (or like I did in the freezer). They should last up to a week or so in the fridge
