Ingredients for the Cookie:
1 oz fresh yeast
1 tbsp lukewarm milk
4.4 oz unsalted butter
2.6 oz superfine sugar
1 large egg
8.8 oz cake flour
1 pinch fine salt
Ingredients for the Filling:
4.6 oz Dutch molasses
4.4 oz brown sugar
3.5 oz unsalted butter
1 tsp ground cinnamon
How to Make Stroopies:
In a medium mixing bowl, dissolve the yeast in lukewarm milk.
Stir in the unsalted butter, superfine sugar, and egg until fully combined.
Whisk the flour and salt together, then mix into the yeast mixture.
Cover the dough with a warm, moist towel and let it rise for about 1 hour.
While the dough rises, make the filling (directions below).
Once the dough rises, form it into balls about ½ inch in diameter.
Place each dough ball on a parchment-lined or greased baking sheet and cover with a warm, moist towel for about 15 minutes.
Heat the waffle iron and lightly spray both sides with cooking spray.
Bake each dough ball until golden brown (about 1½ minutes in an electric waffle iron or 2-3 minutes on a stovetop version).
Remove the waffle from the iron and immediately cut it in half horizontally.
Spoon about 1 tablespoon of filling onto the center of one waffle half and spread evenly.
Place the second waffle half on top and press down lightly.
Pro Tip: Work quickly when adding the filling-the warmer the waffle, the better it spreads and stays together.
How to Make the Filling:
While the dough is rising, add the Dutch molasses to a saucepan over medium to low heat.
Once the syrup is warm, stir in the brown sugar, unsalted butter, and cinnamon.
Stir continuously until the butter is completely melted, then remove the mixture from the heat.
Allow the filling to cool until lukewarm before adding it to your waffles.
