Chicken Parmesan is one of most popular Italian recipes behind pasta and pizza. I wanted to take a recipe that was aready great and make it even better. Folks, it worked!

Roja Sauce: South American Favorite
If you haven’t heard of a Roja sauce before your in for a treat. It’s a south American tomato salsa made from roasting the ingredients until they begin to take one some color. I like using a cast iron skillet to roast the vegetables in a hot oven. The roast adds a great depth of flavor that really makes this sauce so special.
