Homestead Hog Butchering - Leg Quarter

We slaughtered our own hogs on the homestead. This video is for journaling purposes only and not meant to be authoritative.

In this video we are working on the leg quarter cuts. This quarter can be used for roasts, steaks, hams, or ground meat. We chose to make boneless hams and demonstrate how to make semi-boneless and boneless roasts to be later cured and smoked for hams.
