EGG SALAD FOR SANDWICHES
(Cook 15 eggs until hard boiled)
Gently place room temperature eggs into a kettle of water that's at a rolling boil. The water should completely cover the eggs. Let the burner on a high heat and do not cover. Remove the eggs from the boing water after 10 minutes.
Let the eggs cool until they are easy to handle.
Peel the eggs using the pound and roll method.
Place in an airtight container in the refrigerator.
When the eggs are cold smash them up.
(We usually have the eggs in the fridge at least 8 hours.)

DRESSING FOR THE EGGS
1 cup mayonnaise
1 TBS vinegar
1 1/2 tsp mustard
1 tsp salt
1/2 tsp pepper
3 TBS light cream
1 TBS sugar

Mix together well and add to the smashed eggs.
Refrigerate.
