Budget-Friendly Dinner: Tuna Fritters Recipe
Ingredients:
2 cans of tuna, drained
1 small onion, finely chopped
1 small carrot, grated
1/2 cup breadcrumbs
1/4 cup all-purpose flour
2 eggs
1/4 cup milk
1/4 cup chopped fresh parsley (optional)
1/2 teaspoon garlic powder
Salt and pepper to taste
Olive oil or vegetable oil for frying
Instructions:
Prepare the Ingredients:
Drain the tuna and place it in a large mixing bowl.
Add the finely chopped onion, grated carrot, and parsley (if using) to the bowl.
In a separate small bowl, whisk the eggs and milk together.
Mix the Fritter Batter:
Add the breadcrumbs, flour, garlic powder, salt, and pepper to the tuna mixture.
Pour the egg and milk mixture into the bowl with the tuna and vegetables.
Mix everything together until well combined. The batter should be thick enough to hold its shape when spooned.
Form the Fritters:
Heat a generous amount of oil in a large skillet over medium heat.
Using a spoon or your hands, form the tuna mixture into small patties or fritters.
Place the fritters in the hot oil, being careful not to overcrowd the pan.
Cook the Fritters:
Fry the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.
Use a spatula to carefully flip the fritters and cook the other side.
Drain and Serve:
Once the fritters are cooked, remove them from the skillet and place them on a plate lined with paper towels to drain any excess oil.
Serve the tuna fritters hot with a side of your favorite dipping sauce, such as tartar sauce or a simple lemon aioli.
Tips:
For extra flavor, you can add a squeeze of lemon juice or a dash of hot sauce to the batter.
Serve with a simple side salad or steamed vegetables for a complete meal.
These fritters can be made ahead of time and reheated in the oven or on the stovetop for a quick and easy meal.
