HIGH PROTEIN CC COOKIES 🍪
Soft, fudgy and you would never even know they contain chickpeas! Plus they’re high in protein with no refined sugar!

You’ll need:
1 can chickpeas, drained and rinsed (15 oz can)
3/4 cup organic creamy peanut butter (can sub almond, cashew, or sunflower seed butter)
1/3 cup pure maple syrup
1/4 cup oat flour
2 tsp vanilla extract
1 tsp baking powder
1/4 tsp sea salt
1/2 cup dark chocolate chips
optional topping: flaky salt
1. In a food processor, combine all ingredients (minus the chocolate chips) until smooth.
2. Stir in chocolate chips.
3. Roll the mixture into balls and place on a parchment lined baking sheet. It helps to use meal prep gloves for this or to wet your hands as the batter will be sticky.
4. Flatten the cookies into a round cookie shape.
5. Bake at 350F for 12-14 minutes.
6. Let cool and enjoy! ❤️
