Chilli Paneer Fried Rice
1:) Prepare Sauce- In a bowl add 1 tsp light soya sauce, 2 tsp ketchup, 1 tsp oyster sauce, 1 tbsp sriracha or chilli sauce, 1 tsp vinegar, salt ( very less ) and pepper to taste .
2:) In a big mixing bowl add 2 tbsp corn starch, 1/2 tsp salt . Mix. Now add 150 grams paneer cut into cubes. Coat it well with cornstarch.
3:) In a pan ( preferably nonstick) add 2 tsp oil and fry the paneer until it turns brown. Don’t overcook. Once done, take them out in a bowl.
4:) In the same pan, add 1 tbsp oil. Add 1 tbsp finely chopped garlic, 1/2 tsp finely chopped ginger , 1-2 finely chopped green chillies ( adjust according to your spice levels) . Saute for 30 seconds. Now add 1 onion finely chopped. Cook until it turns translucent. Now add 1/2 cup chopped vegetables of your choice. I have added bell peppers and carrots. Now cook for another 1 min.
5:) now add the prepared sauce. Mix well. Add the paneer cubes. Mix well.
6:) To this add 2 cups cooked rice ( use leftover rice for better taste). Mix and cook for 2 mins on high flame.
7:) Lastly add 1 tsp toasted sesame oil. Mix and spread the rice in one layer. Let it cook for 30 seconds. This will make the rice crispy. Switch off the gas and Garnish with green onions or coriander. Enjoy!!
