Here's how to make incredibly flavorful, juicy chicken right in your home oven with just 5 minutes of prep. Let it soak in the flavors, pop it in the oven, and enjoy easy meals all week long.

How to Make It:

1. Prepare the Chicken: Start with 2.5 lbs of boneless chicken thighs. Trim any excess fat as desired and place the thighs in a large bowl.

2. Add Flavor: Process 1 medium yellow onion in a food processor and add it to the chicken.

3. Marinate: Add the juice of 1 lemon, 2 heaping tablespoons of tomato paste, and 2 heaping tablespoons of Greek yogurt. This mixture will tenderize the chicken and add great flavor.

4. Season: Add 3-4 pinches of salt, fresh cracked pepper, 1 tablespoon of thyme, 1 tablespoon of garlic powder, and 1 tablespoon of urfa pepper (or Aleppo pepper or any other chili flakes).

5. Mix and Marinate: Mix everything well. Ideally, let the chicken marinate for 2-6 hours, or even better, overnight. If you're in a hurry, you can cook it right away.

6. Cook: Preheat your oven to 425°F. Remove the chicken from the fridge and let it come to room temperature (about 30 minutes). Pack the marinated chicken tightly into a bread loaf pan (about 8.5x4.5x2.5 inches). Bake for 50 minutes.

7. Drain Juices: Remove the chicken from the oven and carefully tilt the pan to drain the excess juices into a glass bowl or container. Pour the juices over the chicken, then tilt the pan again to remove any remaining juices. Set the juices aside.

8. Serve: Flip the chicken onto a cutting board and cut it into thin slices or strips.

9. Enjoy: Serve the chicken as is, on top of a salad, in a power bowl, or however you like. It keeps well in an airtight container in the fridge for 4-5 days.
