Garlic Herb Griddled Cheese | Blackstone Griddles

Chef Nate got a ton of requests for more "griddled cheese" after his last video! This time, he's mixing it up with caramelized onions, spinach, and Boursin cheese on toasted Cuban bread. Add some lemon peppercorn aioli, and it's a total game-changer.

Garlic Herb Griddled Cheese recipe:

2 large yellow onions, thinly sliced
2 tablespoons unsalted butter
Blackstone Lemon Peppercorn seasoning
1/3 cup Boursin cheese, softened
1/4 cup mayonnaise
Juice of 1/2 lemon
1/2 Cuban loaf, sliced in half
2 large handfuls of spinach
2 cups shredded mozzarella

1. Heat your Blackstone griddle to medium heat and add 1 tablespoon of butter and the onions. Season with a few shakes of Blackstone Lemon Peppercorn Seasoning. Cook for 10-15 minutes until slightly golden and caramelized.

2. In a small bowl, mix the mayonnaise, lemon juice, and a bit of Blackstone Lemon Peppercorn Seasoning until fully incorporated.

3. Add the remaining tablespoon of butter to the griddle and toast the cut side of the Cuban bread.

4. Add the spinach and a splash of water to the onions, tossing frequently. Cook for 2 minutes.

5. Once the bread is toasted, spread the Boursin cheese evenly on the cut side of each piece. Add some of the sauce, then a handful of shredded mozzarella. Top with the onions and spinach, and add more shredded mozzarella.

6. Place the top piece of bread on and toast on both sides. Use a dome to help melt the cheese if desired.

7. When the cheese is melted and bubbly, cut the sandwich in half and serve hot.
