You can pan fry it OR grill it on a barbecue (which adds a lovely smokiness). Definitely give this a shot!🫶
RECIPE (1 servings, 15min prep time):
-1 zucchini (or what‘s left from it)
Cut into big chunks.
Pan fry covered in oil on high heat and season each side with salt.
Flip after 4-5mins and cover again to make sure it‘s being cooked.
Sauce:
-1 Tbsp vegan mayo
-1 Tsp chili sauce
-salt to taste
-1/2 lime
-1 Tsp maple syrup
Mix until well combined.
Serve on the zucchini with cilantro.
