2 cups cooked quinoa
1 cup fresh chopped tomatoes
1 cup fresh chopped cucumbers
1/2 tsp Celtic salt
Juice of 1 lime
1/4 cup fresh parsley, chopped
1 red bell pepper, whole
1 green bell pepper, whole
1 red onion, chopped
2 tbsp olive oil
Instructions:
Prepare the Veggies:

Preheat your oven to 400°F (200°C).
Place the whole red and green bell peppers and the chopped red onion on a baking sheet.
Drizzle the veggies with olive oil.
Bake for 20-25 minutes, or until the peppers are tender and slightly charred.
