Nature’s Golden Mango Ice Cream by @plantcrazii

650g of fresh cut mango (use 2 different types of mango if possible)
1 can full fat coconut milk
3 tbsp brown sugar (or sweetener of choice)
The juice from 1 lime
1/3 cup small cubes of fresh mangoes
1/2 tbsp lime zest

Blend the 650g of fresh mango with the coconut milk, brown sugar and lime juice.

Strain the mixture to remove any mango fibers then place the mixture into a metal baking pan. Mix in the mango chunks and lime zest then cover the pan with parchment paper or plastic wrap. Press the plastic wrap or parchment down onto the mango cream to avoid air from getting into the ice cream.

Freeze for 5-6 hours and enjoy!
Once frozen overnight, the ice cream will need to sit for 30 minutes at room temperature for it to be easily scoopable.
