Ingredients:
3 cups baby spinach
1 cup marinated artichoke hearts
100g cream cheese, I used dairy-free cream cheese
1 cup shredded cheese, I used dairy-free
1 tablespoon Italian seasonings
1-2 garlic clove, minced (optional)
1 loaf bread, I used dark rye sourdough
Method:
Preheat your oven to 190°C.
In a mixing bowl or a food processor, combine baby spinach, chopped artichoke hearts, dairy-free cream cheese, half of the shredded dairy-free cheese, Italian seasonings and minced garlic cloves (if using). Mix well until all ingredients are evenly incorporated.
Cut the sourdough loaf across and along the sides leaving about a 1-inch border around the edges and bottom.
Fill the bread with the spinach and artichoke mixture, pressing it down gently to pack it in.
Place on a baking tray lined with parchment paper and sprinkle over with the renaming cheese. Bake for 20-25 minutes or until the cheese is melted and bubbly.
Once done, remove from the oven and let it cool slightly before serving.
