Cauliflower Potato Salad:
1 Head Cauliflower
1/2 Yellow Onion or 1 small onion
3 stalks celery
4 TBSP Fat Free Yogurt
1/2 Lemon
1 TBSP Yellow Mustard
2-3 baby dill pickles chopped
3 hard boiled egg whites chopped
Splash pickle juice
1tsp cumin
1 tsp paprika
Salt & pepper
Herb of choice (dill, cilantro, parsley)
*red pepper flakes optional
*i added chopped beets the next day and it was so good! The sweetness from the beets was amazing

Directions:
Cut cauliflower into 1 inch pieces and roast in the oven on 425 for 20 minutes.
Let cool and break apart cauliflower with a fork.
Add chopped onion, chopped, celery, pickles, egg whites and stir.
Add yogurt, lemon juice, mustard and pickle juice.
Add cumin, paprika, salt, pepper and red pepper flakes.
Stir and add in herb of choice (cilantro, dill, parsley)
Let cook for 1-2 hours.
